There are several areas to place the pit probe for controlling the cooking temperature.
Clip to the cooking grate
Clipping the probe to the cooking grate is a great option because you are measuring the temperature at the area where your food is actually cooking. It is important to clip it at least 2” away from your food so it doesn’t get effected by cool vapors coming off of the meat. This could produce a false low reading which could possibly keep your fan running and overshoot your fire.

Clip to Thermometer Probe
You can clip the probe to the back of your cooker’s thermometer, but remember that the temperature at the thermometer does not always reflect the temperature around the meat you are cooking.
If you’ve lost or broken your clip…
You might not have enough time to buy some replacement Alligator Clips, but don’t worry! Grab a small potato and wedge or lay it on your cooking grate after you stick your pit probe through it. It’ll do the job in a pinch.
